Fat bastard Merlot

view tech notes

Grape variety: 100% Merlot

Vinification: To make the Fat bastard Merlot we source fruit from all over the Languedoc area known for its stony soil, which naturally limits yields giving the Merlot ripe, fruity character and mature tannins.

Tasting notes: Rich and dense, the complexity of the flavors plays out progressively, beginning with blackberry and plum and finishing with toasty cedar aromas. Tannins are ripe, juicy and delicate.

Food Pairings: Enjoy with roasted chicken, blackened salmon, or semi-soft and herbed cheeses.

Thierry's Notes

Merlot is one of our most popular varietals and we work extra hard to achieve the wine's quintessential characteristics. Keeping in mind the varietals' early ripening nature, I work closely with the growers to monitor the timing of the harvest and ensure the wine's up-front, full-flavored plumy character. In addition, I closely monitor the maceration process to make sure the grapes stay cold to extract deep color, rich fruit flavors and soft tannins.
